Summer Restaurant Recipe: Timbale of Crab, Avocado & Watermelon

An epic avocado-crab-watermelon timbale tower of summer flavors!

The word timbale as it relates to the culinary world is generally a presentation created by the layering of ingredients using a ring mold. This timbale is an ideal representation of summer. Fresh layers of mildly spicy crab, sweet watermelon, buttery avocado and vine ripe tomatoes are flavor balanced in a way that spotlights the individuality of layers while not manipulating natural flavors by using overpowering ingredients. This timbale is indeed the taste of summer in every bite.

INGREDIENTS

For the dressed crab:

  • Equal parts ahi amarillo puree & sour cream
  • Splash of EVOO
  • S&P to taste
  • Mix to marry all ingredients
  • 4 oz crab lightly dressed
  • Reserve additional dressing for plate garnish; dot, drizzle or paint brush

For the avocado:

  • 1 ea ripe avocado, fork mashed
  • Zest of 1/2 lime
  • 8 sprigs cilantro, rough chop
  • S&P to taste

Additional needs:

  • Seedless watermelon medallions cut into 3″ rounds (about 1/4″ thick) using a ring mold.
  • Thin sliced tomato
  • Halved cherry/grape tomatoes
  • Diced red onion
