Roasted Duck Leg with Pumpkin Gnocchi & Apple Salad

When cooked properly duck legs are a perfect symphony of tender dark meat harmoniously basted with its own fat. Whether you serve them whole or shred them, I think you will find duck legs to be an elegantly sophisticated alternative to chicken legs or thighs. To that end, duck legs are also perfectly suitable for use in elevated tacos, nachos or egg roll preparations.

This dish uses shredded, roasted duck leg and pumpkin gnocchi in a bolognese style preparation. It’s layered with savory flavors and topped with a salad of arugula and apples for a burst of contrast.
