Loco Moco Bowl with mashed potatoes

Loco Moco Mashed Bowl

A Loco Moco-inspired dish with a mashed potato plot twist.

This hearty bowl of island-style comfort food fuses mashed potatoes with a ground beef patty and fried egg, topped with gravy, sautéed onion, chives and Furikake seasoning for a Hawaiian-inspired feast.

Loco moco is a dish featured in contemporary Hawaiian cuisine. There are many variations, but the traditional loco moco consists of white rice, topped with a hamburger, a fried egg, and brown gravy. Variations may include bacon, ham, Spam, tofu, kalua pork, Portuguese sausage, teriyaki beef, teriyaki chicken, mahi-mahi, shrimp, oysters, and other meats. [Wikipedia]

Furikake is a dry Japanese condiment meant to be sprinkled on top of rice. Try substituting Furikake for your own rice seasonings to give this dish an additional signature touch. For even more customization try substituting Rangeline shaved steak for the ground beef patty. And, when in season, Maine’s own Caribou Russet potatoes are an excellent local choice for this recipe.
