Foodservice Recipe: BBQ Brunch Burrito
It happens – hungry customers can’t decide between a delicious breakfast or a BBQ lunch. Menuing this hearty wrap saves the day! Seriously though, the flavor combinations in this brunch dish are sure to impress.
1/2 finely chopped green bell pepper
16 ounces seasoned shredded BBQ pork
6 10-inch tortillas
1 1/4 shredded cheddar cheese
1 cup milk
1/4 teaspoon salt
2 tablespoons butter
Pinch of ground black pepper.
- In a medium bowl, whisk together eggs, bell pepper, milk salt and pepper.
- Meanwhile, prepare seasoned shredded pork to desired temperature.
- Stack tortillas and wrap in microwave-safe towels. Microwave on HIGH (100% power) for 1 minute or until heated through. Divide egg mixture among tortillas, spooning it just below the center of each tortilla.
- Top eggs with shredded pork; sprinkle with cheese. Fold bottom edge of each tortilla up and over filling, fold in opposite sides, and roll up from the bottom.
